As an early St. Patrick’s Day gift to you, here are two modern Irish American-style cocktails, presented by both Finnegan’s and the Burren House, and adapted by yours truly. Either make them at home, or wander down to your local Irish pub and order them there. I hear there’s a holiday coming up.

Sláinte!

The Burren House’s Connemara Wild

Ingredients

2 ounces Drumshanbo Gunpowder Irish Gin

¾ ounce Dolin Dry Vermouth

½ ounce fresh lime juice

½ ounce rosemary simple syrup

Spritz of Barber Lee Spirits’ Absinthe Blanche

Rosemary sprig for garnish

Directions

Combine the first four ingredients in a cocktail shaker with ice.

Shake to combine and then strain over new ice in a serving glass.

Spritz with absinthe and garnish with the rosemary sprig.

Finnegan’s Irish Espresso Martini

Ingredients

1 ½ ounces Alamere vodka

½ ounce Baileys Irish Cream

½ ounce strong drip coffee

1 ounce Borghetti di Vero Caffe Espresso Liqueur

½ ounce simple syrup

3 coffee beans

Directions

In a cocktail shaker, combine all liquid ingredients with ice.

Shake until cold and foamy.

Strain into a chilled cocktail glass and garnish with three coffee beans.
