Corte Madera couple Anna and Jeff Fox of Fox Pizza are on a mission to bring their naturally leavened sourdough pizzas to the Bay Area — one pop-up at a time.
Jeff Fox has spent years experimenting — what Anna calls a “mad scientist level of dedication” —refining fermentation times, flour ratios and techniques inspired by countless cookbooks. The result is a unique hybrid of New York- and New Haven-style pizzas with a thin crust, a slightly fluffier bite, caramelized edges and innovative toppings.
At the heart of Jeff Fox’s pies is a seven-year-old sourdough starter, fed twice daily and paired with organic flour from Petaluma’s Central Milling. Current toppings include hot pepperoni and pickled jalapeños; rosemary potato drizzled with house-infused olive oil; and a “tie-dye” pizza swirled with tomato sauce and homemade walnut-pistachio pesto.
“We have all the classics that you love and also something for the adventurous eater,” he says.
Each pizza comes with his signature herby ranch.
Inspired by legends like Italian chef Gabriele Bonci and Portland’s Lovely’s Fifty Fifty, Jeff Fox’s creative approach incorporates seasonal farmers market produce and sometimes infuses a touch of his Mexican heritage with ingredients like cilantro and jalapeños.
You can find him slinging 14-inch pies from his mobile Gozney pizza ovens at scheduled weekend pop-ups in Novato at HenHouse Brewing Co. and Adobe Creek Brewing, and this spring at the Novato and Fairfax seasonal evening farmers markets.
Fox Pizza also caters private events throughout the Bay Area, offering customizable menus that extend beyond pizza to include salads, appetizers and grazing boards.
For now, the newlyweds are balancing day jobs while building their reputation as purveyors of thoughtfully crafted pizza, with dreams of eventually opening a brick-and-mortar space in Marin.
“We’re passionate about connecting with the community,” Anna Fox says. “When we eventually open our doors, we want it to be a space where people gather, and small businesses can collaborate.”
