The Knott’s Boysenberry Festival once again brings more than 80 dishes to the park drizzled, dipped and drenched in the signature fruit that started it all more than 100 years ago.

The fest runs daily through April 27 at the Buena Park theme park. Knott’s Berry Farm Vice President of Food & Beverage Laura Brubaker talked about a few of her favorite new items on the 10th anniversary tasting menu.

Knott’s will once again offer a $55 tasting card ($45 for passholders) good for six tastings from a selection of boysenberry-inspired dishes and drinks at 12 food booths.

Here are Brubaker’s Top 10 favorites for this year.

1 Boysenberry barbecue short rib lasagna

“The boysenberry is in the short rib, but it’s also in the ricotta cheese. This is really tasty,” Brubaker said during an online video interview. “I’ve never done lasagna before. I actually stole this from Costco. I was in Costco one day and they did a short rib lasagna. And I said, ‘Wow, that would be fun. If the short ribs are just dressed in boysenberry then we can just make it our own.’ ”

2 Boysenberry chili mac and cheese

“It’s fun to share,” Brubaker said. “We always have to do meat on things, because that’s what everybody likes. This has our homemade boysenberry chili.”

3 Belgian waffle with boysenberry butter and boysenberry maple syrup

“I thought it would be fun,” Brubaker said. “The Belgian waffle is so good. It’s amazing with the golden sugar. We do a great boysenberry butter and nice boysenberry maple syrup. It comes right out the oven. It’ll be hot.”

4 Boysenberry tiramisu

“I love this one,” Brubaker said. “You’re not going to get a serious coffee flavor. You are just going to get this light-as-air ladyfinger cake with the boysenberry.”

5 Killer Caramel Brownie with whipped cream and a boysenberry drizzle

“There is a double layer of salted caramel,” Brubaker said. “Then I’m just infusing the boysenberry over the top so it’s drenched in it with a whipped topping. It’s really, really gooey.”

6 French toast with boysenberry cream cheese

“We dip it in our batter and deep fry it,” Brubaker said. “It’s like a handheld French toast.”

7 Boysenberry Cheesecake Crisp Pie

“It’s like a boysenberry pie, but now it’s got a crisp topping and it’s cheesecake.”

8 The Stack (boysenberry barbecue pulled pork on cornbread with coleslaw)

“This is really fun,” Brubaker said. “This is our boysenberry cornbread with boysenberry pulled pork and boysenberry coleslaw.”

9 Boysenberry and chocolate chip loaf

“Think about your typical banana loaf, but it’s got boysenberry chocolate chips,” Brubaker said.

10 Stuffed Boysenberry Pie Cookie

“Our pie is stuffed into the cookie.”
