The downtown Niwot community has a sweet new neighbor in Love Ice Cream.

The ice cream shop, run by spouses Katy and Vince Love, opens its doors on Saturday. Located in the heart of Niwot at 240 B Second Ave., the new business occupies what used to be a wealth management firm.

“Now, it’s Niwot’s only ice cream shop,” said Katy Love.

The Loves have lived in Niwot for six years. With five kids, it didn’t take them long to learn that the nearest ice cream shops were all in Boulder, Longmont or Louisville.

“It was always like a 20-minute ordeal to go someplace,” Vince Love said. “There are a lot of kids here, a lot of families. There should be an ice cream shop in Niwot.”

From taste-testing flavors to painting the walls orange and pink, the Loves have worked hard these past few months to transform the building into a premium ice cream destination. Two of their kids are already set to work there, along with some other Niwot High School students.

The shop serves ice cream from Denver-based High Point Creamery. Flavors include traditional favorites, like vanilla and strawberry, as well as more unique creations like brown sugar cinnamon.

On Saturday, the shop will celebrate its grand opening from noon to 9 p.m. The first 100 guests will receive a free scoop of ice cream.

A single scoop is $4, a double is $5.50, and a triple is $6.50. Customers can tack on chocolate sauce for 50 cents or whipped cream for a dollar. Sprinkles are free.

For big groups, or hungry individuals, Love Ice Cream has a specialty: a 14-scoop sundae. As well as paying homage to Colorado’s fourteeners, Katy Love thinks it’s the biggest sundae in the state.

“I could not find anything bigger than 12 in Colorado,” she said.

The Loves also plan to pick a charity partner to support every month.

Katy Love said their first charity will likely either be Longmont Humane Society or Boulder’s There With Care.

As their fellow Niwot eateries close, including 1914 House, the Loves are eager to serve their town.

A couple of weeks ago, they handed out 500 ice cream samples at Niwot’s Honeybee Harvest Festival. Katy Love said the other Niwot business owners have been very supportive of Love Ice Cream.

“We’re hoping that Niwot can really continue to drive traffic, it could be the cutest downtown on the planet,” she said. “This ice cream shop is really paying it forward to the town that’s been so great at helping us raise our children.”

Katy Love hopes the shop will pull in kids and teens from the nearby Niwot schools. She wants teens, especially, to feel inspired by the positive messages printed on the cups.

“We want your day to be a little bit better, and we want you to feel very welcome,” she said. “Feeling special is equally as important as how great your ice cream cone looks.”
