Cranking the coffee to 11

‘Ilike a really strong, robust, flavorful cup of coffee, ever since I was a kid,’’ says Joey Kramer, drummer of Aerosmith, by phone from the cafe of his gym in Austin, Texas. “I’ll drink it black. If it needs to be doctored up, I’ll doctor it up. But I couldn’t find anything on the road.’’

Kramer often complained to his wife, Linda. When she hit her rant maximum, she suggested he start his own coffee bean business, and so he began work on his new project: Rockin’ & Roastin’ Coffee.

After four years of selling beans wholesale, Kramer is now launching his first brick-and-mortar shops, including a cafe in North Attleborough. He and his wife designed the interior of the Hard Rock-meets-Ed Hardy space, which opens in April. The cafe will serve pastries, salads, and, of course, his signature organic coffee and espresso. His first restaurant and venue, “Rockin’ & Roastin’ Cafe & Restaurant — At the Mountain,’’ opened in December in Newry, Maine.

The spiky-haired aficionado may seem a comic figure in the coffee world, but the man takes his joe seriously. His plants grow in the shade of indigenous trees of Guatemala, Ethiopia, and Sumatra so fallen leaves can serve as fertilizer. This method protects the local environment and allows the beans to develop a complex flavor profile. He then roasts his sustainably harvested organic beans with Andover roaster Steve Beattie.

“I sit there and sample it with him,’’ Kramer says. “If it doesn’t turn out right, back to the roaster it goes. [Beattie] has learned exactly what I like.’’

Kramer introduced his style of coffee to New England by distributing his bags of beans to grocery stores and markets around the region in 2012. House of Blues began serving his coffee in 2014. A year later, he threw an opening party on New Year’s Day to celebrate his first venue. His Rockin’ & Roastin’ Cafe, with its memorabilia-lined walls, will sell all of his beans — plus new flavored coffee — at the counter. Now, all that’s left is the playlist.

“I’m an old school R&B guy,’’ he says. “That’s what I brought to Aerosmith.’’

With two locations in progress and no tour dates on the docket, he can crank up James Brown and enjoy a good cup.
