
Take stock of the ingredients in the Bull Market — rye, cognac, the Italian amaro Averna, ginger liqueur — and you will assume it is a burly drink. But you will be wrong. The cocktail, served at Jody Adams’s Trade, is equal parts peppery from the rye and rich from the cognac, with caramel and bitter coffee notes from the Averna. But the amaro’s herbs, citrus, and botanicals slice through the heft of the brown spirits, allowing all of the drink’s fall flavors — ginger, caramel, spiced orange — to come to the surface. Not burly. Just balanced.

THE BULL MARKET
Makes 1 drink
½ ounce Amaro Averna
¾ ounce rye
¾ ounce VS Cognac
1 bar spoon ginger liqueur
1 orange twist (for garnish)
1. Into a mixing glass over ice, pour Averna, rye, cognac, and ginger liqueur. Stir gently for about 30 seconds.
2. Strain into a rocks glass over a large cube.
3. Garnish with the twist.
