For Test Kitchen, world of flavor in those ‘American classics’

In the recent profile of Christopher Kimball’s Milk Street (“A day in the life of Milk Street,’’ Food, Feb. 15), Globe readers were told that America’s Test Kitchen “mainly focuses on American classics.’’ The 200 people who work at the Brookline-based media and publishing company take issue with this characterization, as would our millions of television viewers, magazine subscribers, and book buyers.

Since its inception 24 years ago, America’s Test Kitchen has represented the breadth of American cooking. Just as this country is made up of immigrants, the American kitchen is populated with recipes from around the world. The America’s Test Kitchen team is dedicated to teaching our fans the best methods for preparing dishes as diverse as pad Thai, chicken mole, lamb tagine, and, yes, apple pie.
