Serves 6

Spicy harissa and lime supply just the right amount of zing to this simple fish dish. If the living is easy in the summer, so should be the cooking.

Oil (for the baking sheet)

? cup lime juice

1 teaspoon harissa paste (or more, to taste)

2 teaspoons honey

2 tablespoons olive oil

Salt and pepper, to taste

6 (6 ounces) Arctic char fillets

1½ teaspoons crushed coriander seeds (for garnish)

Aleppo pepper (for garnish)

3 tablespoons chopped parsley (for garnish)

1. Line a rimmed baking sheet with foil and lightly oil it. Set a rack 4 inches from the broiler element and turn on the broiler.

2. In a bowl, whisk the lime juice, harissa, honey, and olive oil together. Add salt and pepper to taste.

3. On the baking sheet, place the fillets. Sprinkle with salt, pepper, and half the lime marinade. Broil for 8 to 10 minutes, or until the fish is cooked through and lightly browned on top.

4. Transfer to a serving dish and sprinkle with the remaining marinade, crushed coriander seeds, Aleppo pepper, and parsley. Sally Pasley Vargas
